Mashed squash

1 1/2 lbs butternut squash

1/4 tsp allspice

1 tsp ground cardamom

1 tablespoon maple syrup

1/2 tsp salt

1/2 tsp ground pepper

1/2 cup chopped red onion

2 tsp melted butter

Cut all squash in half and scrape out seeds. Cut the squash into about 2″ pices and steam for about 30 minutes or until tender or soft when pricked with a fork. Skins will slide off when they are slightly cool and then you can spoon the flesh into a blender or just mash with potato masher. You can use this as a soup, in stews, over your roasted chicken/turkey … or anyway you wish!
