Frying up Dandelion Blossoms

Posted by admin on May 28th, 2008
Dandelion Blossoms
Dandelion
Blossoms can be batter-dipped and deep-fried. They taste a lot like mushrooms
when prepared in this fashion and are a delightful treat.

Ingredients
30
dandelion blossoms (pick blossoms that are open but fairly young and pesticide free)
1 cup of
flour
1 cup whole milk
1 tsp salt
1/2 tsp pepper
1/4 tsp garlic
powder
2 eggs
Deep fryer half filled with vegetable oil

Directions
Combine flour and whole milk. Mix thoroughly. Whip eggs in a separate bowl and
then stir into flour mixture. Add salt, pepper and garlic powder. Mix
thoroughly. Add a little more milk if batter is too thick. Heat oil in deep
fryer to 325 degrees F. Roll blossoms into batter and drop into deep fryer. Fry
5-7 minutes or until golden brown. Blossoms will float to the surface when done.
Place on a paper towel to drain. These taste best when eaten hot.

SQUASH TIME IS A COMING!

Posted by admin on May 27th, 2008

Mashed squash

1 1/2 lbs butternut squash

1/4 tsp allspice

1 tsp ground cardamom

1 tablespoon maple syrup

1/2 tsp salt

1/2 tsp ground pepper

1/2 cup chopped red onion

2 tsp melted butter

Cut all squash in half and scrape out seeds. Cut the squash into about 2″ pices and steam for about 30 minutes or until tender or soft when pricked with a fork. Skins will slide off when they are slightly cool and then you can spoon the flesh into a blender or just mash with potato masher. You can use this as a soup, in stews, over your roasted chicken/turkey … or anyway you wish!

Rosemary Oil Recipe

Posted by admin on May 27th, 2008
Good for dressing salads, basting meats, or with sauteed lamb fillets.

Although sprigs of fresh rosemary add a decorative touch to the finished product, the oil is best without it.

RECIPE INGREDIENTS
1 bunch rosemary (about 8 sprigs)
4 cups olive oil
RECIPE METHOD

Wash
and dry rosemary thoroughly. Remove leaves and place in the bowl of a
food processor. With the motor running, add oil slowly and process
until plant fiber breaks up and puree is smooth.

Heat
mixture very gently for 20 minutes. Strain through a double layer of
dampened cheesecloth or muslin. Do not press on solids but allow oil to
drip through slowly. Will keep indefinitely.

Serving Size = 1 Tablespoon

Fresh & Pretty Dandelion Lemonade!

Posted by Pam on May 24th, 2008

Enjoy this wonderful sweet lemonade treat!

DANDE-ADE Tea

Bright and early, head out to enjoy the warmth of the rising sun (ok, so I was out at around 10:30…I missed it actually rising…but it had rose!) and gather some beautiful yellow dandelion flowers. Just make sure they are free from pesticides…guess that goes without saying. Pick about 2 quarts of flowers to make about a gallon of dandeade.

Place the flowers in a gallon jar and add distilled or purified water at room temperature along with the juice of 4 lemons or 1/2 cup of lemon juice. Add agave, stevia or fresh honey to taste and then chill the whole concoction.

You can also speed up the process and just add ice and pour the DandeAde into a glass. Leave the flower particles to add a nice and tasty touch to your drink - or strain - whichever you prefer.

It is said that dandelion blossoms can help relieve cramps, backaches, stomach aches and headaches - and of course, anything this fresh will give you a nice heady lift!

From the healing porch of Pam……
